One thing to keep in mind is that the Enterprise was not the first NX class ship. That distinction goes to the NX Alpha. The NX class of ships were named for the NX Project, which was Earth's Warp 5 program. If you pay attention, you'll see that in the pre-Federation times, ship classes were mostly letters and such ("J-class", "Y-class", etc.). I would therefor assume that the convention of naming a class of ships after the first ship of that line is something adopted after the inception of the Federation.
